For Over 100 Years, Restaurant Has Been Frying Burgers In The Same Grease

Dyer’s Burgers in Memphis, Tennessee has been frying its patties in the same grease since 1912, claiming it as the secret to their flavor-packed burgers. The restaurant’s founder, Elmer “Doc” Dyer, originally relied on a special seasoning blend to win over customers. However, the turning point came when a cook forgot to change the grease, and a customer declared the next day’s burger “the best I’ve ever had.” That grease, referred to as “century grease,” has been carefully strained and seasoned ever since. “It’s the same molecules from 1912,” current owner Kendall Robertson told “Southern Living Magazine.”

Despite what might sound unappetizing, customers embrace the tradition, with some even requesting their entire burger—buns and all—be dunked in the legendary grease for extra flavor. Robertson reassures fans that the grease isn’t running out, as fresh patties add more with every batch, and the restaurant has backup buckets of the seasoned oil stored away. Dyer’s goes through up to 1,000 pounds of beef weekly, ensuring their century-old tradition continues to delight burger lovers.
