Researchers using computer modeling are saying that switching to insect protein or cultured milk could reduce global warming and water and land use by over 80%. Novel or Future Foods, or NFFs, include milk fermented with lactic acid bacteria and foods made from insect meal.
Sounds yummy, right? The scientists say NFFs have a longer shelf life, enhanced taste, and improved digestibility. The scientists say that ‘feasible consumption constraints’ were considered, meaning ‘how well people would accept NFFs.’ The study from the research has been published in the journal Nature Food.
